6 slices bacon, chopped
1 lb potato gnocchi
1 medium onion, diced
3 garlic cloves, minced
2 tbsp butter
2 tbsp flour
4 cups chicken stock
1 cup heavy cream
2 cups shredded cheddar cheese
Salt, pepper, optional paprika/cayenne
Cook bacon until crispy; remove and reserve 2 tbsp bacon fat.
Sauté onion and garlic in bacon fat until translucent.
Make roux with butter and flour; cook 1-2 min.
Whisk in stock and cream; bring to simmer.
Add gnocchi; cook 3-5 min until gnocchi float.
Stir in cheese and bacon; season to taste.
Serve hot with bread.
