Bacon Cheddar Gnocchi Soup

Ingredients

  • 6 slices bacon, chopped

  • 1 lb potato gnocchi

  • 1 medium onion, diced

  • 3 garlic cloves, minced

  • 2 tbsp butter

  • 2 tbsp flour

  • 4 cups chicken stock

  • 1 cup heavy cream

  • 2 cups shredded cheddar cheese

  • Salt, pepper, optional paprika/cayenne

Instructions

  • Cook bacon until crispy; remove and reserve 2 tbsp bacon fat.

  • Sauté onion and garlic in bacon fat until translucent.

  • Make roux with butter and flour; cook 1-2 min.

  • Whisk in stock and cream; bring to simmer.

  • Add gnocchi; cook 3-5 min until gnocchi float.

  • Stir in cheese and bacon; season to taste.

  • Serve hot with bread.
