BBQ Chicken Pasta Salad – The Perfect Summer Side Dish

Ingredients

  • 3 cups cooked pasta (rotini or penne)

  • 2 cups cooked chicken, diced or shredded

  • 1/2 cup barbecue sauce

  • 1/2 cup ranch dressing

  • 1 cup corn kernels (fresh, canned, or frozen)

  • 1 red bell pepper, diced

  • 1/2 red onion, finely chopped

  • 1 cup shredded cheddar cheese

  • Salt, pepper, and smoked paprika to taste

  • Fresh parsley or cilantro for garnish

Instructions

  • Cook pasta until al dente, drain, and rinse with cold water.

  • Prepare chicken and cut into bite-size pieces.

  • In a bowl, whisk together barbecue sauce and ranch.

  • Toss pasta, chicken, veggies, and cheese with dressing.

  • Chill for 30 minutes, garnish, and serve.

Notes

  • Use rotisserie chicken for convenience.

  • Add extra BBQ sauce before serving if pasta absorbs dressing.

  • For spice, use chipotle BBQ sauce or pepper jack cheese.
