2 lbs ground beef (80/20)
8 slices thick-cut bacon
6 slices cheddar cheese
6 brioche buns
1 cup ketchup
½ cup bourbon
¼ cup brown sugar
2 tbsp Worcestershire sauce
1 tbsp apple cider vinegar
1 tsp smoked paprika
Salt, pepper, garlic powder to taste
Lettuce, tomato, onion for toppings
Make bourbon BBQ sauce by simmering ketchup, bourbon, sugar, Worcestershire, vinegar, and paprika for 15 minutes.
Cook bacon until crispy; set aside.
Form beef into 6 patties, season well.
Grill or pan-cook burgers 4–5 minutes per side, topping with cheese in last minute.
Toast buns, then assemble with sauce, toppings, burger, bacon, and more sauce.
Sauce can be made ahead and stored for a week.
For extra smoky flavor, grill burgers over charcoal.
