1 cup cornmeal
1 cup all-purpose flour
1 tbsp baking powder
½ tsp baking soda
1 tsp salt
2 large eggs
1 ½ cups buttermilk
4 tbsp melted butter
1 cup shredded cheddar cheese
2 jalapeños, finely diced
Optional: smoked paprika, green onions, bacon
Preheat waffle iron and grease lightly.
Whisk dry ingredients in a bowl.
In a separate bowl, whisk eggs, buttermilk, and melted butter.
Combine wet and dry ingredients, stirring gently.
Fold in cheese and jalapeños.
Pour batter into waffle iron and cook 3–5 minutes until golden.
Serve with desired toppings.
Remove jalapeño seeds for a milder flavor.
Top with honey or salsa for extra flavor.
