12 oz chicken sausage, sliced
1 cup orzo pasta
2 cups broccoli florets
2 ½ cups chicken broth
1 small onion, chopped
3 garlic cloves, minced
2 tbsp olive oil
1 tbsp lemon juice
¼ cup Parmesan (optional)
Salt and pepper to taste
Heat olive oil in a skillet and brown sausage slices for 3-4 minutes. Remove and set aside.
Sauté onion and garlic until soft and fragrant.
Add orzo and toast for 1-2 minutes. Pour in broth and simmer for 8-10 minutes.
Stir in broccoli during the last 3 minutes.
Return sausage, add lemon juice, Parmesan if using, and mix well. Serve hot.
