9 oz cheese tortellini
2 cups cooked shredded chicken
6 cups chicken broth
2 medium carrots, diced
2 celery stalks, chopped
1 medium onion, diced
3 cloves garlic, minced
2 cups spinach
1 tsp Italian seasoning
2 tbsp olive oil
Salt and pepper to taste
Optional: ½ cup heavy cream
Sauté onion, carrots, and celery in olive oil until soft.
Stir in garlic and cook for 30 seconds.
Add broth, seasoning, chicken, and tortellini. Simmer 5-7 minutes.
Stir in spinach and cream (optional) until wilted.
Serve hot with Parmesan and fresh parsley.
