Chicken Tortellini Soup

Ingredients

  • 9 oz cheese tortellini

  • 2 cups cooked shredded chicken

  • 6 cups chicken broth

  • 2 medium carrots, diced

  • 2 celery stalks, chopped

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 2 cups spinach

  • 1 tsp Italian seasoning

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • Optional: ½ cup heavy cream

Instructions

  • Sauté onion, carrots, and celery in olive oil until soft.

  • Stir in garlic and cook for 30 seconds.

  • Add broth, seasoning, chicken, and tortellini. Simmer 5-7 minutes.

  • Stir in spinach and cream (optional) until wilted.

  • Serve hot with Parmesan and fresh parsley.
