2 ciabatta rolls
2 grilled chicken breasts, sliced
½ cup mayonnaise
2 chipotle peppers in adobo
4 slices cheddar cheese
½ small red onion, thinly sliced
Olive oil or butter for brushing
Blend chipotle peppers with mayonnaise to make chipotle mayo.
Grill chicken until fully cooked, then slice.
Spread mayo on ciabatta rolls.
Layer chicken, cheese, and onion.
Press in panini press or skillet until golden brown and cheese melts.
Serve immediately.
