1.5 lbs chicken breasts, cubed
12 oz linguine pasta
½ cup unsalted butter
5 garlic cloves, minced
2 tbsp Dijon mustard
2 tbsp lemon juice + ½ tsp zest
½ tsp red pepper flakes
2 tbsp fresh parsley, chopped
½ cup Parmesan cheese
½ cup heavy cream (optional)
Salt & pepper to taste
Cook linguine until al dente, reserve 1 cup pasta water.
Sear chicken in olive oil, then set aside.
Make cowboy butter sauce with butter, garlic, Dijon, lemon, parsley, and red pepper flakes.
Stir in pasta water, Parmesan, and cream (if using).
Toss chicken and linguine in sauce, garnish, and serve hot.
