1 lb ground beef or sausage
1 onion, chopped
4 cloves garlic, minced
2 tbsp tomato paste
1 can (28 oz) crushed tomatoes
4 cups chicken or beef broth
1 tbsp Italian seasoning
8–10 lasagna noodles, broken
1 cup ricotta cheese
½ cup shredded mozzarella
¼ cup Parmesan
Salt and pepper to taste
Brown meat in a large pot.
Add onion and garlic; cook until softened.
Stir in tomato paste, crushed tomatoes, and broth. Season with herbs.
Add noodles; simmer until tender, about 12-15 minutes.
Mix ricotta, mozzarella, and Parmesan in a bowl.
Ladle soup into bowls, top with cheese mixture, and serve hot.
For a lighter version, use ground turkey.
Add spinach at the end for extra veggies.
If reheating, add broth to adjust thickness.
