2 cups cooked turkey, shredded or diced
½ cup dried cranberries
4 cups bread cubes or stuffing mix
1 cup chicken or turkey broth
2 eggs, beaten
1 cup onion, diced
1 cup celery, diced
4 tbsp butter
2 tbsp fresh herbs (sage, thyme, parsley) or 1 tbsp dried
Salt and pepper to taste
Preheat oven to 375°F (190°C).
Sauté onion and celery in butter until soft.
Mix bread cubes, turkey, cranberries, and sautéed veggies.
Add broth and eggs, stir until mixture holds together.
Roll into balls and place on baking sheet.
Bake 25–30 minutes until golden.
Add cheese for extra richness.
Freeze unbaked balls and bake when needed.
