  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth (low sodium)
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Pat chicken dry and season with salt, pepper, and Italian seasoning.
  • Heat olive oil and butter in a skillet over medium-high. Sear chicken 4–5 minutes per side until golden brown and cooked through (165°F). Remove and set aside.
  • Lower heat to medium. Add garlic and cook for 1–2 minutes until fragrant.
  • Pour in chicken broth to deglaze the pan, scraping brown bits. Stir in cream and parmesan. Simmer 4–5 minutes until thickened.
  • Return chicken to skillet, spoon sauce over, and simmer 5 minutes.
  • Garnish with parsley and serve hot with pasta, rice, or bread.

  • For extra flavor, add sautéed mushrooms or spinach.
  • Use freshly grated parmesan for the best texture.
  • To lighten the recipe, use half-and-half instead of cream.
