2 cans (15 oz each) butter beans, drained
½ cup sun-dried tomatoes, chopped
3 cloves garlic, minced
1 cup heavy cream
½ cup vegetable broth
2 cups fresh spinach
½ cup grated parmesan
2 tbsp olive oil
½ tsp red pepper flakes (optional)
Salt & pepper to taste
Heat olive oil in a skillet over medium heat. Sauté garlic for 30 seconds.
Stir in sun-dried tomatoes and cook 2 minutes.
Add cream, broth, and red pepper flakes. Simmer 3-4 minutes.
Stir in butter beans. Simmer another 5 minutes.
Add spinach and parmesan. Cook 2-3 minutes until creamy.
Serve warm with bread, pasta, or rice.
