Creamy Tuscan Marry Me Butter Beans

Ingredients

  • 2 cans (15 oz each) butter beans, drained

  • ½ cup sun-dried tomatoes, chopped

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup vegetable broth

  • 2 cups fresh spinach

  • ½ cup grated parmesan

  • 2 tbsp olive oil

  • ½ tsp red pepper flakes (optional)

  • Salt & pepper to taste

Instructions

  • Heat olive oil in a skillet over medium heat. Sauté garlic for 30 seconds.

  • Stir in sun-dried tomatoes and cook 2 minutes.

  • Add cream, broth, and red pepper flakes. Simmer 3-4 minutes.

  • Stir in butter beans. Simmer another 5 minutes.

  • Add spinach and parmesan. Cook 2-3 minutes until creamy.

  • Serve warm with bread, pasta, or rice.
