1.5 lbs baby potatoes
4 tbsp unsalted butter
5 cloves garlic, minced
1 tbsp fresh rosemary or thyme
Salt and black pepper, to taste
Preheat oven to 425°F (220°C).
Boil potatoes in salted water for 8 minutes, drain, and dry.
Melt butter in a pan, add garlic, and herbs.
Toss potatoes with garlic butter, salt, and pepper.
Roast 20-25 minutes until crispy and golden.
