1 lb ground beef
2 tbsp taco seasoning
1 ½ cups salsa
8 small tortillas (corn or flour)
1 cup black beans, drained
1 cup corn kernels
2 cups shredded cheese
Optional toppings: sour cream, cilantro, avocado, jalapeños
Brown beef and stir in taco seasoning with ½ cup salsa.
Layer tortillas, beef, beans, corn, and cheese in the crockpot. Repeat layers.
Cook on low 4–6 hours or high 2–3 hours.
Top with desired garnishes and serve.
Use spicy salsa for heat.
Substitute shredded chicken for beef.
