1 lb ground beef
1 medium onion, diced
2 garlic cloves, minced
1 can black beans, drained
1 can corn (or 1 ½ cups frozen)
1 can cream of mushroom soup (10.5 oz)
1 cup sour cream
2 cups shredded cheddar cheese
1 bag frozen tater tots (32 oz)
1 tsp smoked paprika
1 tsp chili powder
Salt and pepper to taste
Preheat oven to 375°F (190°C).
Cook ground beef and onion in a skillet until browned; drain excess grease.
Stir in garlic, beans, corn, soup, sour cream, and 1 cup cheese. Mix well.
Spread mixture in a greased 9×13 baking dish. Top with remaining cheese.
Arrange tater tots in a single layer over the top.
Bake uncovered for 35–40 minutes until tots are golden and casserole is bubbling.
Rest for 5 minutes before serving.
For a spicier casserole, add jalapeños or hot sauce.
Greek yogurt can replace sour cream.
Freezer-friendly: assemble, wrap tightly, and freeze for up to 3 months.
