Easy Cowboy Casserole Recipe

Ingredients

  • 1 lb ground beef

  • 1 medium onion, diced

  • 2 garlic cloves, minced

  • 1 can black beans, drained

  • 1 can corn (or 1 ½ cups frozen)

  • 1 can cream of mushroom soup (10.5 oz)

  • 1 cup sour cream

  • 2 cups shredded cheddar cheese

  • 1 bag frozen tater tots (32 oz)

  • 1 tsp smoked paprika

  • 1 tsp chili powder

  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).

  • Cook ground beef and onion in a skillet until browned; drain excess grease.

  • Stir in garlic, beans, corn, soup, sour cream, and 1 cup cheese. Mix well.

  • Spread mixture in a greased 9×13 baking dish. Top with remaining cheese.

  • Arrange tater tots in a single layer over the top.

  • Bake uncovered for 35–40 minutes until tots are golden and casserole is bubbling.

  • Rest for 5 minutes before serving.

Notes

  • For a spicier casserole, add jalapeños or hot sauce.

  • Greek yogurt can replace sour cream.

  • Freezer-friendly: assemble, wrap tightly, and freeze for up to 3 months.
