Easy Homemade Lasagna Soup Recipe

Ingredients

  • 1 lb ground beef or sausage

  • 1 onion, chopped

  • 3 garlic cloves, minced

  • 2 tbsp tomato paste

  • 1 can (28 oz) crushed tomatoes

  • 4 cups beef or chicken broth

  • 1 tsp Italian seasoning

  • 1 pinch red pepper flakes

  • 8 oz pasta (mafalda, rotini, or broken lasagna noodles)

  • 1 cup ricotta cheese

  • 1 cup shredded mozzarella

  • ½ cup grated Parmesan

  • Salt and pepper to taste

Instructions

  1. Brown meat in olive oil. Drain excess fat.

  2. Add onion and garlic. Cook until softened.

  3. Stir in tomato paste, Italian seasoning, and red pepper flakes.

  4. Add tomatoes and broth. Simmer for 20 minutes.

  5. Add pasta and cook until al dente.

  6. Serve hot with ricotta, mozzarella, and Parmesan on top.

Notes

  • Cook pasta separately if storing leftovers.

  • Use ground turkey for a lighter version.

  • Add spinach or kale at the end for extra nutrition.
