1 onion, chopped
3 garlic cloves, minced
1 tbsp fresh ginger, grated
3 carrots, sliced
2 celery stalks, chopped
1 tsp ground turmeric
6 cups vegetable broth
2 cups kale or spinach, chopped
1 can chickpeas (optional)
Juice of 1 lemon
Salt and pepper to taste
Heat olive oil in a pot. Sauté onion, garlic, and ginger until fragrant.
Add carrots and celery, cook 5 minutes.
Stir in turmeric, then pour in broth. Simmer 20 minutes.
Add kale and chickpeas. Cook 5–7 minutes.
Finish with lemon juice, salt, and pepper. Serve warm.
Swap chickpeas for lentils or beans.
Add rice or quinoa for a heartier meal.
For creaminess, stir in coconut milk at the end.
