Easy Longevity Soup Recipe

Ingredients

Scale
  • 2 tbsp olive oil

  • 1 onion, chopped

  • 3 garlic cloves, minced

  • 1 tbsp fresh ginger, grated

  • 3 carrots, sliced

  • 2 celery stalks, chopped

  • 1 tsp ground turmeric

  • 6 cups vegetable broth

  • 2 cups kale or spinach, chopped

  • 1 can chickpeas (optional)

  • Juice of 1 lemon

  • Salt and pepper to taste

Instructions

  • Heat olive oil in a pot. Sauté onion, garlic, and ginger until fragrant.

  • Add carrots and celery, cook 5 minutes.

  • Stir in turmeric, then pour in broth. Simmer 20 minutes.

  • Add kale and chickpeas. Cook 5–7 minutes.

  • Finish with lemon juice, salt, and pepper. Serve warm.

Notes

  • Swap chickpeas for lentils or beans.

  • Add rice or quinoa for a heartier meal.

  • For creaminess, stir in coconut milk at the end.
