Garlic Herb Chicken with Mashed Potatoes and Glazed Carrots

  • 4 chicken breasts

  • 4 cloves garlic, minced

  • 3 tbsp butter

  • Fresh thyme and rosemary

  • 1/2 cup chicken broth

  • 2 lbs potatoes

  • 1/2 cup heavy cream

  • 4 tbsp butter

  • 1 lb carrots

  • 2 tbsp brown sugar

  • Salt and pepper

Instructions

  • Boil potatoes until tender. Mash with butter, cream, salt, and pepper.

  • Glaze carrots with butter, sugar, and water until tender.

  • Sear chicken with butter, garlic, and herbs. Add broth and simmer.

  • Serve chicken over mashed potatoes with glazed carrots on the side.
