Green Onion Zucchini Cheddar Quick Bread

  • 1 ½ cups grated zucchini

  • 1 ½ cups shredded cheddar cheese

  • 4 green onions, chopped

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • ½ cup milk

  • ¼ cup olive oil

  • 2 large eggs

  • Salt and black pepper to taste

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.

  • Grate zucchini and squeeze out excess moisture.

  • In a bowl, whisk flour, baking powder, salt, and pepper.

  • Add eggs, milk, and olive oil. Mix gently.

  • Fold in zucchini, cheddar, and green onions.

  • Bake 45–55 minutes until golden. Cool before slicing.
