1 ½ cups grated zucchini
1 ½ cups shredded cheddar cheese
4 green onions, chopped
2 cups all-purpose flour
2 tsp baking powder
½ cup milk
¼ cup olive oil
2 large eggs
Salt and black pepper to taste
Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
Grate zucchini and squeeze out excess moisture.
In a bowl, whisk flour, baking powder, salt, and pepper.
Add eggs, milk, and olive oil. Mix gently.
Fold in zucchini, cheddar, and green onions.
Bake 45–55 minutes until golden. Cool before slicing.
