1.5 lbs chicken breast or thighs, cut into chunks
2 cups pineapple chunks
2 bell peppers, sliced
1 red onion, chopped
3 garlic cloves, minced
1/4 cup soy sauce
3 tbsp honey
1 tbsp rice vinegar
2 tbsp olive oil
Optional: sesame seeds, green onions
Preheat oven to 400°F. Line a sheet pan.
Whisk soy sauce, honey, garlic, and rice vinegar in a bowl.
Toss chicken, pineapple, peppers, and onion in the sauce. Spread on sheet pan.
Bake 25–30 minutes, flipping halfway, until chicken is cooked and veggies are tender.
Broil 2 minutes for extra char. Garnish and serve hot.
Use thighs for juicier meat.
Drain canned pineapple if using.
Add chili flakes for heat.
