1 cup whole wheat flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp cinnamon
½ tsp nutmeg
¼ tsp ginger
½ cup pumpkin puree
¼ cup Greek yogurt
¼ cup maple syrup
1 large egg
1 tsp vanilla extract
Optional: ¼ cup chocolate chips, nuts, or cranberries
Preheat oven to 350°F and grease mini muffin pan.
Mix dry ingredients in a bowl.
Mix wet ingredients in a separate bowl.
Fold dry into wet ingredients until just combined.
Add optional mix-ins.
Fill muffin pan ¾ full and bake 12-15 min.
Cool 5 min and transfer to a wire rack. Serve warm.
