1 cup pumpkin puree
1/2 cup maple syrup
1/2 cup almond or peanut butter
1 egg (or flax egg)
1 teaspoon vanilla extract
2 cups rolled oats
1 teaspoon baking powder
1 tablespoon pumpkin pie spice
Pinch of salt
Optional: 1/3 cup chocolate chips, nuts, or dried fruit
Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
Mix pumpkin puree, maple syrup, nut butter, egg, and vanilla in a bowl.
Stir in oats, baking powder, pumpkin spice, and salt.
Fold in chocolate chips or nuts if using.
Spread batter evenly in pan and bake 28–32 minutes.
Cool completely before slicing.
