Healthy Pumpkin Oatmeal Bars Recipe

  • 1 cup pumpkin puree

  • 1/2 cup maple syrup

  • 1/2 cup almond or peanut butter

  • 1 egg (or flax egg)

  • 1 teaspoon vanilla extract

  • 2 cups rolled oats

  • 1 teaspoon baking powder

  • 1 tablespoon pumpkin pie spice

  • Pinch of salt

  • Optional: 1/3 cup chocolate chips, nuts, or dried fruit

Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.

  • Mix pumpkin puree, maple syrup, nut butter, egg, and vanilla in a bowl.

  • Stir in oats, baking powder, pumpkin spice, and salt.

  • Fold in chocolate chips or nuts if using.

  • Spread batter evenly in pan and bake 28–32 minutes.

  • Cool completely before slicing.
