1 lb thinly sliced beef
1 medium bell pepper, sliced
1 small onion, sliced
1 ½ cups provolone or mozzarella cheese, shredded
1 ½ cups almond flour
2 cups shredded mozzarella (for dough)
2 tbsp cream cheese
2 large eggs
Salt & pepper to taste
Preheat oven to 375°F (190°C).
Sauté peppers and onions, then cook beef until browned. Set aside.
Melt mozzarella and cream cheese together; stir in almond flour and eggs to form dough.
Roll dough, add cheese, beef, and veggies, then roll into a log.
Slice into rolls and bake for 15-18 minutes until golden brown.
Serve warm with extra cheese sauce if desired.
