Low-Carb Bacon Cheeseburger Casserole Recipe

  • 1 ½ lbs ground beef

  • 6 slices bacon, cooked and chopped

  • 2 cups shredded cheddar cheese

  • 4 oz cream cheese, softened

  • ½ cup heavy cream

  • 3 large eggs

  • ½ cup chopped onion

  • 2 garlic cloves, minced

  • ¼ cup chopped pickles (optional)

  • ½ tsp paprika

  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).

  • Cook bacon until crispy; chop and set aside.

  • Brown ground beef with onion, garlic, and paprika; drain excess fat.

  • In a bowl, whisk eggs, cream, and cream cheese until smooth.

  • Layer beef in a baking dish, pour egg mixture over, and top with cheese and bacon.

  • Bake 20-25 minutes until bubbly and set.

  • Rest for 5 minutes, slice, and serve.
