3 overripe bananas, mashed
½ cup butter, melted
½ cup maple syrup
¼ cup bourbon
2 eggs
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
½ tsp salt
½ cup chopped walnuts or pecans (optional)
Preheat oven to 350°F. Line a loaf pan with parchment.
Mash bananas, mix with butter, maple syrup, bourbon, and eggs.
Whisk flour, baking soda, baking powder, spices, and salt.
Fold dry mix into wet until just combined. Stir in nuts if using.
Pour into loaf pan, bake 55–65 minutes until toothpick comes out clean.
Cool before slicing.
For muffins, bake 20–22 minutes.
Freeze slices for easy grab-and-go breakfasts.
