2 chicken breasts (or thighs)
1 cup sun-dried tomatoes, chopped
3 cloves garlic, minced
1 small onion, diced
4 cups chicken broth
1 cup heavy cream
½ cup Parmesan cheese
2 cups fresh spinach
2 tbsp olive oil
1 tbsp butter
1 tsp Italian seasoning
Salt & pepper to taste
Sear chicken in olive oil until golden, then set aside.
Sauté onion and garlic, then add sun-dried tomatoes.
Pour in chicken broth and bring to a boil.
Stir in cream and Parmesan, simmer until creamy.
Shred chicken, add to soup, stir in spinach.
Season and serve hot.
