Marsala Chicken Orzo Recipe – A Comforting Skillet Dinner

  • 2 chicken breasts (or thighs)

  • 1 ½ cups orzo pasta

  • 1 cup Marsala wine

  • 3 cups chicken broth

  • 8 oz mushrooms, sliced

  • 1 onion, diced

  • 3 cloves garlic, minced

  • ½ cup heavy cream

  • ½ cup grated Parmesan

  • 2 tbsp olive oil

  • 1 tbsp butter

  • Salt & pepper to taste

  • Fresh parsley, chopped

Instructions

  1. Season chicken with salt, pepper, and flour. Sear in oil and butter until golden. Remove.

  2. Sauté mushrooms, onion, and garlic in same pan. Deglaze with Marsala wine.

  3. Add broth and orzo, simmer 10 minutes.

  4. Return chicken, cook through. Stir in cream and Parmesan.

  5. Garnish with parsley and serve warm.

Notes

  • For lighter sauce, use half-and-half instead of cream.

  • Add spinach or peas for extra veggies.
