Meatloaf with Mashed Potatoes and Cheese Recipe

- 2 lbs ground beef (80/20)
- 1 cup breadcrumbs
- 2 eggs
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- ½ cup ketchup or BBQ sauce
- 2 lbs potatoes, peeled and cubed
- 4 tbsp butter
- ½ cup cream or milk
- 2 cups shredded cheddar cheese
- Salt & pepper to taste
- Preheat oven to 375°F (190°C).
- Mix beef, breadcrumbs, eggs, onion, garlic, Worcestershire, salt, and pepper. Press into a greased baking dish. Spread ketchup on top. Bake 30 minutes.
- Boil potatoes until tender, mash with butter, cream, salt, and pepper.
- Spread potatoes over meatloaf, top with cheese.
- Bake another 15–20 minutes until cheese is bubbly and golden. Rest 10 minutes before slicing.
Notes
- Use leftover mashed potatoes to save time.
- Substitute ground turkey for a lighter version.
- Add bacon and chives for loaded mashed potatoes.
