Meatloaf with Mashed Potatoes and Cheese Recipe

  • 2 lbs ground beef (80/20)
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • ½ cup ketchup or BBQ sauce
  • 2 lbs potatoes, peeled and cubed
  • 4 tbsp butter
  • ½ cup cream or milk
  • 2 cups shredded cheddar cheese
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix beef, breadcrumbs, eggs, onion, garlic, Worcestershire, salt, and pepper. Press into a greased baking dish. Spread ketchup on top. Bake 30 minutes.
  3. Boil potatoes until tender, mash with butter, cream, salt, and pepper.
  4. Spread potatoes over meatloaf, top with cheese.
  5. Bake another 15–20 minutes until cheese is bubbly and golden. Rest 10 minutes before slicing.

 

Notes

  • Use leftover mashed potatoes to save time.
  • Substitute ground turkey for a lighter version.
  • Add bacon and chives for loaded mashed potatoes.
