Mediterranean Keto Ground Chicken Skillet with Olives and Feta

  • 1 lb ground chicken

  • 2 tbsp olive oil

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 1 cup cherry tomatoes, halved

  • 2 cups spinach, fresh

  • 1/2 cup Kalamata olives, halved

  • 1/2 cup crumbled feta cheese

  • 1 tbsp lemon juice

  • 1 tsp dried oregano

  • 1/2 tsp paprika

  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onion and cook 3–4 minutes.

  2. Stir in garlic, then add ground chicken. Cook until no pink remains, about 6–8 minutes.

  3. Season with oregano, paprika, salt, and pepper.

  4. Add cherry tomatoes and cook 3–4 minutes until softened. Stir in spinach until wilted.

  5. Add olives and cook for 2 minutes more.

  6. Remove from heat, sprinkle with feta, and drizzle with lemon juice. Serve warm.

Notes

  • Substitute turkey or beef for chicken.

  • Use vegan feta for dairy-free.

  • Great served with cauliflower rice or a side salad.
