  • 1 onion, chopped

  • 4 garlic cloves, minced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 small red potatoes, cubed

  • 6 cups vegetable broth

  • 1 tsp thyme

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Sauté onions, garlic, carrots, and celery for 5-7 minutes until softened.

  3. Add mushrooms, thyme, rosemary, and paprika. Cook 3 minutes.
