2 tbsp olive oil
1 onion, chopped
4 garlic cloves, minced
2 carrots, diced
2 celery stalks, diced
3 small red potatoes, cubed
1 cup sliced mushrooms
2 cups fresh spinach
6 cups vegetable broth
1 tsp thyme
1 tsp rosemary
½ tsp smoked paprika
Salt and black pepper to taste
Heat olive oil in a large pot over medium heat.
Sauté onions, garlic, carrots, and celery for 5-7 minutes until softened.
Add mushrooms, thyme, rosemary, and paprika. Cook 3 minutes.
Pour in broth and add potatoes. Bring to a boil, then simmer 25-30 minutes.
Stir in spinach. Cook 3 minutes more. Season to taste and serve hot.
