1 lb ribeye or sirloin steak, thinly sliced
2 bell peppers (green, red, or yellow), sliced
1 medium onion, sliced
2 cloves garlic, minced
1 tbsp olive oil (plus more if needed)
4 slices provolone cheese
Salt and pepper to taste
Heat oil in a skillet over medium-high heat.
Cook peppers and onions until softened, about 6–8 minutes. Remove.
Sear beef strips for 2–3 minutes until browned. Season with salt, pepper, and garlic.
Return veggies, toss together, and cook 2 minutes.
Top with provolone, cover until melted, then serve in bowls.
