8 slices brioche or challah bread
3 large eggs
½ cup pumpkin puree
½ cup milk
1 tsp pumpkin pie spice
1 tsp vanilla extract
1 tbsp sugar (optional)
Butter or oil for cooking
Maple syrup, powdered sugar, whipped cream (for serving)
Whisk eggs, pumpkin, milk, spices, vanilla, and sugar in a bowl.
Heat a skillet over medium heat, add butter.
Dip bread slices in custard, coat both sides evenly.
Cook each side for 2-3 minutes until golden brown.
