Pumpkin French Toast Breakfast Recipe

  • 8 slices brioche or challah bread

  • 3 large eggs

  • ½ cup pumpkin puree

  • ½ cup milk

  • 1 tsp pumpkin pie spice

  • 1 tsp vanilla extract

  • 1 tbsp sugar (optional)

  • Butter or oil for cooking

  • Maple syrup, powdered sugar, whipped cream (for serving)

Instructions

  • Whisk eggs, pumpkin, milk, spices, vanilla, and sugar in a bowl.

  • Heat a skillet over medium heat, add butter.

  • Dip bread slices in custard, coat both sides evenly.

  • Cook each side for 2-3 minutes until golden brown.

  • Serve warm with toppings of choice.
