2 large sweet potatoes, cubed (about 1-inch pieces)
2 tbsp honey (or maple syrup)
2 tbsp olive oil
1 tsp ground cinnamon
½ tsp salt
Optional: fresh parsley, crushed pecans, extra honey
Preheat oven to 400°F (200°C).
Wash, peel (optional), and cube sweet potatoes.
Toss cubes with olive oil, honey, cinnamon, and salt.
Spread evenly on a parchment-lined baking sheet.
Roast for 25-30 minutes, flipping halfway, until golden and tender.
Garnish with parsley or extra honey before serving.
