Roasted Sweet Potatoes with Cinnamon & Honey

  • 2 large sweet potatoes, cubed (about 1-inch pieces)

  • 2 tbsp honey (or maple syrup)

  • 2 tbsp olive oil

  • 1 tsp ground cinnamon

  • ½ tsp salt

  • Optional: fresh parsley, crushed pecans, extra honey

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Wash, peel (optional), and cube sweet potatoes.

  3. Toss cubes with olive oil, honey, cinnamon, and salt.

  4. Spread evenly on a parchment-lined baking sheet.

  5. Roast for 25-30 minutes, flipping halfway, until golden and tender.

  6. Garnish with parsley or extra honey before serving.
