1 lb Italian sausage
5 medium Yukon gold potatoes, diced
1 medium onion, diced
3 garlic cloves, minced
4 cups chicken broth
1 cup heavy cream
2 cups fresh spinach or kale (optional)
Salt and pepper to taste
Red pepper flakes (optional)
Brown sausage in a large pot. Drain excess grease.
Add onion and garlic, sauté until fragrant.
Stir in potatoes and chicken broth; simmer 15 minutes.
Lower heat, stir in cream, and simmer another 5 minutes.
Add greens (if using), season to taste, and serve hot.
