1 cup cornmeal
1 cup all-purpose flour
2 tsp baking powder
½ tsp salt
¼ cup sugar
2 large eggs
¾ cup milk
¼ cup melted butter
¼ cup honey
2 tbsp butter + 1 tbsp honey for brushing
Preheat oven to 375°F and grease mini muffin pan.
Mix dry ingredients.
Whisk wet ingredients.
Combine wet and dry.
Fill muffin cups ¾ full.
Bake 12–15 minutes until golden.
Brush with honey butter.
Cool slightly and serve.
