Southwest Chicken Salad

Ingredients

  • 2 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon chili powder

  • ½ teaspoon cumin

  • ½ teaspoon paprika

  • ½ teaspoon garlic powder

  • Salt and pepper to taste

  • 4 cups romaine lettuce, chopped

  • 1 cup black beans, rinsed

  • 1 cup corn kernels

  • 1 cup cherry tomatoes, halved

  • 1 avocado, diced

  • ½ cup red onion, thinly sliced

  • ½ cup shredded cheddar cheese

  • ½ cup tortilla strips (optional)

  • Chipotle ranch dressing or dressing of choice

Instructions

  1. Season chicken with oil and spices.

  2. Grill over medium-high heat 5–6 minutes per side until fully cooked.

  3. Chop lettuce and prep veggies.

  4. Layer salad ingredients in a bowl.

  5. Top with grilled chicken, dressing, and tortilla strips.

Notes

  • Use rotisserie chicken for a quicker prep.

  • Store salad and dressing separately for freshness.
