2 cups shredded cooked chicken
½ cup creamy peanut butter
3 tbsp soy sauce (or tamari)
2 tbsp rice vinegar
1 tbsp honey
1–2 tsp sriracha
1 cup shredded carrots
1 cup shredded cabbage
1 red bell pepper, sliced
4 large tortillas or lettuce leaves
Fresh lime wedges & cilantro for garnish
Whisk together peanut butter, soy sauce, vinegar, honey, sriracha, and water until smooth.
Toss shredded chicken with half the peanut sauce.
Layer chicken, veggies, and a drizzle of sauce onto tortillas or lettuce leaves.
Roll up tightly, slice in half, and serve with lime wedges.
