½ cup pumpkin purée (blotted)
½ cup melted unsalted butter
¾ cup brown sugar
¼ cup granulated sugar
1 egg yolk
1 tsp vanilla extract
1¾ cups all-purpose flour
½ tsp baking soda
1½ tsp pumpkin pie spice
1 cup semi-sweet chocolate chips
Pinch of salt
Preheat oven to 350°F (175°C). Line baking sheets with parchment.
Blot pumpkin to remove extra moisture.
Mix butter, sugars, pumpkin, egg yolk, and vanilla until smooth.
In another bowl, combine flour, baking soda, pumpkin spice, and salt.
Fold dry ingredients into wet until just combined.
Stir in chocolate chips.
Scoop 2 tbsp dough balls, place on baking sheet, and bake 11-13 minutes.
Cool on baking sheet for 5 minutes before transferring to a wire rack.
