Thick & Chewy Pumpkin Chocolate Chip Cookies

  • ½ cup pumpkin purée (blotted)

  • ½ cup melted unsalted butter

  • ¾ cup brown sugar

  • ¼ cup granulated sugar

  • 1 egg yolk

  • 1 tsp vanilla extract

  • 1¾ cups all-purpose flour

  • ½ tsp baking soda

  • 1½ tsp pumpkin pie spice

  • 1 cup semi-sweet chocolate chips

  • Pinch of salt

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment.

  • Blot pumpkin to remove extra moisture.

  • Mix butter, sugars, pumpkin, egg yolk, and vanilla until smooth.

  • In another bowl, combine flour, baking soda, pumpkin spice, and salt.

  • Fold dry ingredients into wet until just combined.

  • Stir in chocolate chips.

  • Scoop 2 tbsp dough balls, place on baking sheet, and bake 11-13 minutes.

  • Cool on baking sheet for 5 minutes before transferring to a wire rack.
