Zuppa Toscana Recipe

Ingredients

  • 1 lb Italian sausage

  • 4 slices bacon

  • 4 cups russet potatoes, sliced

  • 1 onion, diced

  • 4 garlic cloves, minced

  • 6 cups chicken broth

  • 4 cups kale, chopped

  • 1 cup heavy cream

  • Salt, pepper, red pepper flakes to taste

  • Parmesan cheese for garnish

Instructions

  • Cook bacon until crispy, set aside.

  • Brown sausage in the same pot.

  • Add onion and garlic, cook until fragrant.

  • Stir in potatoes and broth, simmer 15 minutes.

  • Add kale and cook 3-4 minutes.

  • Stir in cream, season, and add bacon back in.

  • Serve hot with Parmesan.
