1 lb Italian sausage
4 slices bacon
4 cups russet potatoes, sliced
1 onion, diced
4 garlic cloves, minced
6 cups chicken broth
4 cups kale, chopped
1 cup heavy cream
Salt, pepper, red pepper flakes to taste
Parmesan cheese for garnish
Cook bacon until crispy, set aside.
Brown sausage in the same pot.
Add onion and garlic, cook until fragrant.
Stir in potatoes and broth, simmer 15 minutes.
Add kale and cook 3-4 minutes.
Stir in cream, season, and add bacon back in.
Serve hot with Parmesan.
